Here’s what you’ll need:
3 links Italian sausage (I use mild)
4 cloves pressed garlic
1 onion, diced
½ c. water
2 cans chicken broth…or that big carton of broth…I usually use the whole thing.
½ c. apple cider (don’t leave this out!)
1 16-oz. can diced tomatoes
1 8 oz. can tomato sauce
1 c. sliced carrots
½ tsp. dried basil
½ tsp. dried oregano
2 medium zucchini, grated (use your cheese grater or food processor!)
15 oz. package cheese tortellini
½ Tbsp. dried parsley
Directions:
In a large pot, cook sausage
Chop onions and garlic and add to the sausage.
Continue cooking until onions are translucent and your sausage is cooked.
Add tomatoes, tomato sauce, juice, water, chicken broth, carrots, oregano, and basil.
Cover and simmer for ½ hour.
Add parsley and zucchini and simmer for another 15 minutes or so.
Add the tortellini and cook until tender, and then serve with bread and freshly-grated Parmesan and some Italian bread.

Yum that sounds so amazing! I loved when people brought us meals. It was so nice to not have to think about it ourselves and it was just really heartwarming to know people were thinking of us and the kids 🙂

Ooh, this sounds delicious! Can someone make me a meal even though I'm not having a baby 😉 But in all seriousness, I think bringing a meal is the best gift you can bring to a new mom!

Sounds pretty fantastic… though I have to ask, why the apple cider? If we don't like sweet entrees we could leave this out I imagine- or does the apple cider do something important to the dish that I don't realize?
