Kid Tested, Mom Approved: Family Friendly Food

Welcome to week two of Kid Tested, Mom Approved! Today the lovely Colleen from Meet the Sullivans is our host and we are talking about family friendly food. I’m so excited for today because I am always on the hunt for simple, easy to make meals that kids love.

Hudson just started eating real food, so we are always experimenting in our house. My criteria for meals is: yummy taste, healthy ingredients, and easy to make. Today I’m sharing my Chicken, Quinoa, and Black Bean Bowls. I made up this recipe based on things that Hudson loves to eat….and it turns out my husband and I love it too!

Here’s what you’ll need:
1 14.5oz can diced tomatoes
1 15oz can black beans
1 1/2 cups cooked quinoa
shredded cheese
shredded cooked chicken
1 zucchini
salt and pepper to taste

First, cook your quinoa. Here’s a tip: cook it in chicken broth instead of water…it will taste so much better! Then shred your zucchini using a cheese grater. Steam it in the microwave for 2 minutes.

Next, rinse the black beans and then add everything except the cheese to a skillet and cook over medium-low heat until warmed through.

Place the cooked mixture on top of your quinoa and then top with cheese! My husband and I added sour cream and salsa to ours.

Hudson goes crazy over quinoa….but word of warning: it’s crazy messy. But what isn’t when you have a one year old?

    I just bought some quinoa yesterday. I'll have to try this because he loves everything else that's in the dish. And yay for dogs! Our pups always make sure the floor is shiny under our guy too.

    That's a great idea on how to mix up Quinoa! Callie loved it when we were doing new foods all the time but I haven't cooked it in forever. I'm going to have to give this a try!

    Oh that looks so yummy! Kenned loves all of those other ingredients, although she has been on the fence about quinoa. I bet if I mixed it up like that she would eat it! Great idea!!!

    I haven't tried quinoa with Aria yet. This looks like such a yummy recipe to start out with! Too bad I just did my shopping for the week, but now it is on next week's list. Thanks for posting.

    This has my mouth watering and it's only 9:30! We'll have to try this recipe out. My husband thinks quinoa is taking a big walk on the wild side, I however love it and so will he 😉

    I will definitely have to try this! I haven't given my daughter quinoa, I wonder if she'll like it. She does love most of the other ingredients, although black beans are hit or miss sometimes. 🙂 I think I would also enjoy this for myself!

    OMG I love that your dog is right there! We had trained our dogs to stay out of the kitchen before the baby was born… So my dust buster eats our quinoa!

    Another quinoa favorite that we love is black beans and banana mixed in. Sounds weird, but it is actually amazing got it from a baby food book! You can add chicken as well to it. Love the photos thanks for sharing!
