These cookie bars were a HUGE hit in my house. The squeals from my three kids over how yummy these are made the mess in my kitchen 100% worth it! But really, these are super easy to make. Plus, you can change up your M&M’s to fit any holiday! These would be so fun at Christmas too! Make sure to add more M&M’S and mini chocolate chips to the top of the cookie dough before baking for a pretty presentation.
Here’s what you’ll need:

2 sticks butter at room temperature

1 cup granulated sugar

1 cup golden brown sugar firmly packed

3 large eggs

1 1/2 teaspoons pure vanilla extract

3 cups all-purpose flour

3/4 teaspoon baking soda

3/4 teaspoon salt

1 cup M&M’s plus a little more for topping

1 cup mini chocolate chips plus a little more for topping
How to Make the M&M Cookie Bars

Preheat oven to 350 degrees.

Line a 9×13 baking pan with foil and then spray it with a nonstick cooking spray.

For the cookie dough, I recommend using a stand mixer: beat together two sticks of room temperature butter with brown sugar and granulated sugar.

Once mixed, add in eggs and vanilla extract and continue mixing until well combined.

Add flour, salt, and baking soda and mix just until cookie dough forms.

With a spatula, stir in chocolate chips and M&M’S.

Transfer cookie dough into your lined pan. (The foil makes the bars easier to lift out and cut after baking.)

Sprinkle dough with additional M&M’s and mini chocolate chips….don’t skip this step! It makes the bars pretty!

Bake 30-35 minutes in a 350 degree oven until bars are golden brown.

Let cool completely and cut. You can cut into bars or use cookie cutters to make cut outs, like I did!
